Tree-to-bar chocolate
One step further than bean-to-bar: the maker grows the cacao as well as manufacturing it. Rare, and mostly found in producing countries.
What it is
A bean-to-bar maker buys beans and does the manufacturing. A tree-to-bar maker also grows them, which means one operation controls genetics, agriculture, fermentation, drying and every factory step.
That matters because fermentation is the largest single flavour variable and it normally sits with a separate party in a separate country. A tree-to-bar maker who does not like their bar's acidity can change the fermentation protocol, which almost nobody else can.
The model is largely restricted to producing countries for obvious reasons, and it has been part of a broader shift towards manufacturing at origin rather than shipping raw beans to Europe and North America — which keeps considerably more of the value where the cacao was grown.
