Smoke vs burnt
Two different faults with two different causes. Smoke happens at the drying yard; burnt happens at the roaster.
Why these get confused
Both read as an acrid off-note and both get called burnt. They arise at opposite ends of the supply chain, and knowing which one you have identifies where the problem is.

Choose Smoke when
When the note is smoky and hammy rather than charred, and the bar is from a high-rainfall origin.
Choose Burnt when
When the note is ashy and bitter and dominates the bar. That is roasting, not drying.
