Trinitario vs Criollo
Trinitario is a Criollo–Forastero hybrid population. It keeps much of the aromatic potential and adds the hardiness Criollo lacks.
Side by side
| Trinitario | Criollo | Why it matters | |
|---|---|---|---|
| Genetic status | A hybrid population, not a single type. Individual Trinitarios vary widely in how much Criollo they carry. | An ancestral population, though pure examples are now rare. | Trinitario is the least informative of the three labels precisely because it covers so much ground. |
| Aromatic potential | High, and much of the world's fine-flavour cacao is Trinitario. | High, with a characteristically low-astringency delicacy. | For a taster, the useful distinction is not better or worse but that Trinitario spans a far wider range. |
| Hardiness | Substantially better than Criollo — the reason for the cross. | Poor. | |
| Availability | Widely planted through the Caribbean, Venezuela, Papua New Guinea and Madagascar. | Scarce. |
Choose Trinitario when
For fine flavour at a realistic price and with real availability. Most of the best single-origin bars are Trinitario.
Choose Criollo when
When you specifically want the low-astringency delicate profile and can verify the claim.
