Blossom
Orange blossom, elderflower, honeysuckle — the lighter floral register, and the one cocoa butter itself contributes.
Blossom notes are the gentlest floral character in chocolate, and unusually they can come from the cocoa butter rather than from the solids. Non-deodorised cocoa butter carries a faint fresh-dairy, slightly floral quality of its own, which is why a good white chocolate tastes of something and a deodorised one does not.
In dark chocolate, blossom character generally travels with fruit and indicates a light roast on aromatic material.
