Flavourings and inclusions

Anything added to chocolate has to be dry, and that single constraint explains why fruit chocolate uses powder and why so many flavoured bars are white.

Everything added to chocolate must be dry. That is why fruit is freeze-dried and citrus goes in as oil — and why delicate flavours are carried on white chocolate, which has nothing competing with them.

The water constraint

Chocolate is a suspension of solids in fat containing almost no water. Introduce free water and the sugar and cocoa particles clump, the mass thickens and seizes, and it cannot be recovered as chocolate.

Everything about how flavour is added follows from this. Fruit goes in freeze-dried, not fresh. Citrus goes in as oil, not juice. Herbs and teas are infused into a fat and the fat is used, or they are dried and ground. Alcohol goes into a filling, not into the chocolate.

Flavourings versus inclusions

A flavouring is dispersed through the chocolate — a powder, an oil, a ground spice. It has to survive tempering, which means it has to be stable at working temperature and not introduce moisture.

An inclusion is a discrete solid you can see and bite: nuts, dried fruit, honeycomb, biscuit, crisped cereal. The constraints are different. An inclusion must be dry enough not to migrate moisture into the chocolate over shelf life, and it must not be so hard that it breaks teeth or so soft that it goes limp.

Moisture migration is the failure that shows up weeks later: a slightly damp inclusion draws water out over time, the chocolate around it dulls, and the piece develops sugar bloom.

Why so many flavoured bars are white

White chocolate is cocoa butter, milk solids and sugar with no cocoa solids, so it is a neutral fatty carrier with nothing competing for attention — and fat carries aroma.

That is why matcha, yuzu, sakura, rose, pistachio and most delicate flavours appear on white bases. It is a technical decision rather than a cheap one, and it is why a dark chocolate version of the same product frequently just tastes of dark chocolate.
