The fats in chocolate
Cocoa butter's melting behaviour is why chocolate works at all — and it is also why every substitute involves a genuine trade-off rather than a simple downgrade.

Cocoa butter's narrow melt just below body temperature is what makes chocolate snap and melt cleanly. Substitutes trade that curve for cost or for not needing tempering, and the mouth notices.
Why cocoa butter is unusual
Cocoa butter is solid at room temperature and melts across a narrow range just below body temperature. That is what produces the two properties chocolate is valued for: it snaps when broken and it melts cleanly in the mouth without being greasy.
It is also polymorphic — it can crystallise into several different forms, only one of which gives gloss, snap and stability. That is the entire reason tempering exists, and it is a cost as well as a virtue: cocoa butter is expensive and difficult, and every substitute is an attempt to keep some of the behaviour without one or both of those.
The substitutes and what each trades
Cocoa butter equivalents are vegetable fats formulated to behave similarly enough to be mixed with cocoa butter. In the EU a limited proportion of specified vegetable fats is permitted in products still sold as chocolate, and it must be declared. They temper, they behave broadly like cocoa butter, and they cost less.
Lauric fats — coconut and palm kernel derivatives — are the basis of compound coatings. They do not require tempering, which is their whole point, and they set hard and melt at a different temperature, which is why a compound coating feels waxier and does not melt the same way.
Milk fat, added deliberately, softens the set and slows bloom.
Each of these is a real engineering answer to a real problem. What none of them does is reproduce cocoa butter's melting curve exactly, which is why the difference is detectable.
How to tell from the label and the piece
The label first: in the EU vegetable fats other than cocoa butter must be declared, so the ingredient list will say. Where the word chocolate cannot legally be used at all, the product is usually described as a coating or a confection.
The piece second. Compound coating is generally glossier than it should be for something that was never tempered, snaps rather than shatters, and leaves a coating on the roof of the mouth as it warms. That last sensation is the most reliable informal test, and it is the reason couverture and compound sit at the top of this catalogue's list of commonly confused pairs.
