Why your chocolate will not set

Four causes with four different fixes: no temper, wrong chocolate, too warm, or something added that softened it.

Soft chocolate is untempered, the wrong product, too warm, or has something added. Diagnose which before remelting, because three of the four are not tempering problems.

It was not tempered

The most common cause. Untempered chocolate does eventually set, but slowly, soft, dull and streaky — and it never gets hard or snappy. If it has been an hour at cool room temperature and it is still tacky, this is why.

The fix is to remelt and temper properly. There is no way to rescue a soft set into a hard one without going back to the start.

It was the wrong chocolate

Chocolate chips are formulated with reduced cocoa butter so they hold their shape when baked. Melted and poured, they set thickly and poorly. Chocolate spread, filled chocolate and anything containing added oil will not set at all.

Check what actually went into the bowl. This failure looks identical to a temper failure and no amount of tempering technique fixes it.

The room is too warm

Dark chocolate needs the room below roughly 20°C to set firmly; milk and white are softer still and need cooler conditions. A warm kitchen in summer simply will not set chocolate.

The fridge is the wrong answer — rapid chilling causes condensation and bloom. A cool room, a cellar, or the fridge for ten minutes only and then out, is better.

Something was added

Cream, butter, oil, alcohol and honey all soften the set proportionally. A ganache is chocolate deliberately prevented from setting hard, and adding even a spoonful of cream to chocolate intended for coating will keep it tacky.

If you added something, the chocolate is behaving correctly. Increase the chocolate proportion or accept that it is now a filling rather than a coating.
