Why does chocolate melt in your mouth?

Cocoa butter melts just below body temperature — an unusual property for a natural fat, and the single physical fact most of chocolate's behaviour follows from.

If you read nothing else

Cocoa butter melts sharply just under 37°C. That is why chocolate is solid in your hand, liquid in your mouth, and why substitute fats never feel right.

A fat with a very narrow melting range

Most fats soften gradually over a wide temperature range. Cocoa butter does not: it stays solid up to around 30°C and then melts over a few degrees, finishing just below body temperature. That sharpness is why chocolate goes from firm to fully liquid in the mouth rather than becoming progressively greasy.

Why the melt matters for flavour

Aromatic compounds are released as the fat melts, and most of what we perceive as flavour is retronasal aroma rather than taste. A chocolate that melts cleanly at body temperature releases its aromatics in a controlled sequence, which is why letting a piece melt gives a much fuller impression than chewing it.

Six crystal forms, one useful

Cocoa butter is polymorphic — it can crystallise six different ways, with different melting points. Only form V gives the right melt along with snap, gloss and contraction. Tempering exists entirely to ensure a batch sets in that form, and untempered chocolate sets in unstable forms that melt too readily and convert over days into the grey film called bloom.

Why substitutes feel wrong

Compound coating replaces cocoa butter with vegetable fat that melts above body temperature. It sets hard without tempering, which is genuinely useful, but it leaves a waxy coating on the palate because it never fully melts. That sensation is the clearest way to tell compound from chocolate without reading the label.
