Why temper chocolate at all?
It controls which of cocoa butter's six crystal forms the chocolate sets in. Skip it and the chocolate is soft, dull, and blooms within days.
If you read nothing else
Tempering has no effect on flavour and total effect on everything else — snap, gloss, mould release, melt and shelf stability.
Six forms, one useful
Cocoa butter is polymorphic: it can crystallise in six different arrangements with different melting points and properties. Only form V melts just below body temperature, contracts on setting, and produces a hard snap and a glossy surface. Tempering is the process of ensuring that form, and only that form, seeds the set.
What happens if you skip it
Untempered chocolate sets in unstable forms. It is soft, dull, marks with fingerprints, will not release from a mould, and over days the unstable crystals convert to the stable form VI, migrating fat to the surface as they go. That migration is fat bloom — the grey film on old chocolate.
When you genuinely can skip it
Anything that gets melted into something else. Ganache, brownie batter, hot chocolate, mousse — none of them preserves a crystal structure, so tempering the chocolate first achieves nothing. Compound coating must not be tempered at all, because it contains no cocoa butter to crystallise.
It does not change the taste
Tempering is entirely physical. A badly tempered bar contains exactly the same chocolate as a well-tempered one, and if you melt it into a cake nobody will be able to tell. What it changes is texture, appearance and how the chocolate behaves — which for anything eaten as chocolate is most of the experience.
