Why do I crave chocolate?

The three explanations in widest circulation — magnesium, phenylethylamine, and the body knowing what it needs — are the three with least behind them. What the evidence points at instead is fat, sugar and learning.

What the evidence shows

Chocolate is among the most frequently reported food cravings in the populations where it has been studied, and the reporting is consistent enough to be a real phenomenon rather than an artefact.

What the research points toward is sensory and learned rather than nutritional. Chocolate combines a high fat content with a high sugar content and melts at body temperature, which is an unusual and rewarding combination; that combination is reliably palatable, and repeated pairing of a food with reward is a well-described route to craving it specifically.

The cross-cultural evidence is the strongest single argument against a physiological explanation. Reported chocolate craving varies substantially between countries and between populations within them, and the food named in a craving varies with what is culturally available and culturally coded as a treat. A universal nutrient-driven drive would not vary that way.

Some studies also report an association between craving and restriction: foods a person is deliberately limiting are more likely to be craved.

What it does not show

It does not show that chocolate craving indicates a nutritional need, and the specific claim about magnesium does not survive contact with the numbers. Chocolate is not an exceptional magnesium source relative to foods people do not report craving — several nuts, seeds and leafy vegetables carry comparable or greater amounts per gram — and a craving mechanism that selected for magnesium would not consistently select the one magnesium-containing food that also carries the most sugar and fat.

It does not support the phenylethylamine explanation either, and the reason is bioavailability rather than absence: the compound is present and is metabolised efficiently in the gut and liver, so very little reaches systemic circulation intact. That is covered in full on the mood record.

It does not establish that chocolate is addictive in the clinical sense. The word is used loosely in popular writing and the research on food and addiction is contested, unsettled, and not something this catalogue takes a position on.

And it does not say anything about what any individual should do, which is not a question the evidence addresses.

How good is the evidence

The craving-reporting literature is substantial and is questionnaire-based, which is its main limitation: it measures what people report and identify, not what drives them. The cross-cultural variation is the most robust finding in it and is the one most often left out of consumer accounts.

The magnesium claim is assessed here against composition data rather than against a trial, because no trial supports it and the compositional comparison is sufficient to show why it is implausible. The phenylethylamine claim rests on a pharmacokinetic argument that is well established. Both are recorded as unsupported rather than disproved, which is the accurate description.

The tier is `plausible_mechanism`: the fat-sugar-and-learning account has a credible basis and is not established as the explanation.

    Research on cocoa flavanols and short-term measures of vascular function is real, and a narrowly scoped EU health claim exists on that basis. It concerns a specified daily intake of flavanol compounds, not chocolate. Flavanol content is not indicated by cocoa percentage, is substantially reduced by ordinary processing, and is not declared on mainstream products. Meanwhile the non-cacao mass of a dark bar is overwhelmingly sugar.

Why the magnesium story is so persistent

It has the shape of a satisfying explanation: a symptom, a deficiency, and a food that supplies the missing thing. It also has a grain of truth in it — cocoa does contain magnesium, and that is where it starts.

Where it fails is comparative. If a magnesium deficit drove the craving, it would be satisfied by any magnesium-rich food, and it would not select for the version of that food carrying the most sugar. It would also predict cravings for foods nobody reports craving.

The honest version is duller and it explains more: people crave a specific palatable food they have learned to find rewarding, and afterwards look for a reason that sounds less like preference.

What the melting point has to do with it

Cocoa butter melts across a narrow range just below body temperature, which is why chocolate turns from solid to liquid in the mouth rather than being chewed. That transition delivers fat and sugar together, quickly, with an aroma release that a solid or a liquid alone does not produce.

That is a genuine and specific sensory property, it is unusual among foods, and it is a better candidate for why chocolate in particular is craved than any nutrient in it. It is also why the same ingredients in a different physical form do not have the same pull.
