Terroir
A short, steep valley between the Cordillera de la Costa and the Caribbean, with a delimited production area of a few hundred hectares. Beans are fermented and sun-dried on the plaza in front of the village church, which is a documented communal practice rather than a picturesque detail — it is one of the few places where the entire post-harvest of a designated cacao happens in one place under one set of hands.
Flavour character
Widely and consistently described in the trade as delicate and complex, with the nut, dried fruit and mild acidity associated with Criollo-leaning material. These are commercial sensory descriptions rather than panel findings, and this catalogue records them as such.
