Bake-stable chocolate
Chocolate formulated to hold its shape through an oven. The batons inside a pain au chocolat, and a close relative of the chocolate chip.
What it is
Bake-stable products are formulated with reduced cocoa butter and often added stabilisers so that they survive baking with their shape intact. The batons in a pain au chocolat are the most familiar example, along with bake-stable chips and drops.
They are a manufacturing grade rather than a composition, and the trade-off is the same as with chips: what makes them hold their shape is exactly what makes them poor for melting, coating or ganache.
