What it is

Blonde chocolate is white chocolate held at a moderate temperature for long enough that the milk solids and sugar undergo Maillard browning. The result is tan rather than ivory, and tastes of caramel, toffee and cooked milk rather than of plain sweetness.

It is compositionally still white chocolate, which is why it is filed as a composition here rather than as a manufacturing grade — nothing has been added or removed. It is also the rare professional product a home cook can reproduce closely, by baking white chocolate at a low temperature and stirring periodically until it colours.

What the percentage means here

Refers to cocoa butter, as on any white chocolate. The caramelisation changes nothing about the cacao content.

Working with it

Behaves like white chocolate and is similarly heat-sensitive. Home caramelisation works at around 120°C with regular stirring; it will look seized before it comes back together.
