Tempering white chocolate

The lowest temperatures of the three and the least forgiving, because there are no cocoa solids to buffer the sugar and milk.

White chocolate tempers at 29–30°C, having been melted no higher than 45°C and cooled to 26–27°C. The margins are the narrowest of the three types.

It is also the most easily ruined before tempering begins: with no cocoa solids and a high proportion of sugar and milk solids, it scorches at temperatures dark chocolate tolerates comfortably. Most white chocolate tempering failures are actually melting failures that happened several minutes earlier.

To bring white chocolate into temper without scorching it first.
Working temperature
2930°C — The lowest working window of the three, and the narrowest. A degree of overshoot is enough to lose the temper.

Method

  1. 1. Melt very gently to no more than 45°C, at half power or off the heat.

    Where people go wrong: Melting at dark chocolate's temperature, which scorches the milk solids.

  2. 2. Cool to 26–27°C by seeding.

  3. 3. Rewarm to 29–30°C and hold.
