What it is

White chocolate contains the fat from the cacao bean and none of the non-fat solids. That is why it is pale, why it carries no bitterness or astringency at all, and why it has no meaningful cocoa percentage — the only cacao-derived component in it is the butter.

The recurring claim that white chocolate 'is not real chocolate' is a statement about a person's expectations rather than about the law. Both the EU and the US define it and set compositional minimums for it. What is true is that it is the type where quality is easiest to fake: replace cocoa butter with a cheaper vegetable fat and the product is no longer white chocolate in either jurisdiction, but it looks identical on a shelf.

What the percentage means here

A percentage on white chocolate refers to cocoa butter, not to cocoa solids, because there are none. A '35% white chocolate' contains roughly a third cocoa butter — a statement about richness and melting behaviour, not about chocolate intensity. Comparing it to a 35% milk bar is meaningless.

These differ by jurisdiction, and the difference is real rather than technical: the same words on a wrapper describe different products either side of the Atlantic.

How it tastes

At its best, distinctly of cocoa butter — a faint fresh-dairy, slightly floral quality that deodorised butter strips out entirely. Most mass-market white chocolate uses deodorised cocoa butter and tastes only of milk and sugar, which is the main reason for the category's reputation.

Working with it

The most difficult type to work with. High sugar and milk-solid content means it scorches at temperatures dark chocolate tolerates, and it seizes readily. Tempering temperatures run a degree or two below dark. In ganache it needs roughly three parts chocolate to one part cream.

Commonly misunderstood

That it is not chocolate. It is, in both major jurisdictions, and the compositional minimums are real. The genuine criticism is a different one: that a great deal of white chocolate is made with deodorised cocoa butter and so tastes of nothing much.
