Chocolate and mango

Sweet, resinous and low in acid, which makes it a poor contrast and an excellent aromatic partner. Dried mango works with chocolate far more reliably than fresh.

Ripe mango is heavily aromatic — terpenes and lactones give it a resinous, faintly pine-and-peach quality — and comparatively low in acid for a tropical fruit. That combination means it does not cut fat the way passion fruit does; it perfumes rather than contrasts.

So mango and chocolate works best where the aim is aromatic layering rather than balance, and where something else is supplying the acidity. It also works far better dried than fresh: drying concentrates the sugars and the aromatics and removes the water that makes fresh mango difficult to combine with chocolate at all.

Variety matters more here than with most fruit. The intensely perfumed Indian and Pakistani varieties are a different ingredient from the fibrous, mild types sold most widely in Europe.
