Bain-marie or microwave?
The microwave is faster and safer than its reputation. The bain-marie's advantage is control, and its risk is the steam.
If you read nothing else
Microwave in short bursts with stirring, or bain-marie with the bowl clear of the water and no lid. Stay under 50°C for dark and 45°C for milk and white.
The microwave
Chopped chocolate, medium power, 20–30 second bursts, stirring between each. Stop while there are still visible unmelted pieces and let residual heat finish the job.
The reason it works better than expected: chocolate holds its shape when melted, so it looks unmelted long after it is. Stirring is not optional — it is the only way to know the actual state, and it prevents hot spots that scorch.
The bain-marie
A bowl over — not touching — barely simmering water. The advantage is gentle, even heat and the ability to hold the chocolate warm while working.
The risk is water. Steam condensing on the bowl or dripping from a lid seizes the chocolate instantly. Use a bowl that sits well inside the pan rim, keep the water at a bare simmer, and never cover it.
Temperature limits
Dark chocolate should not exceed about 50°C, milk about 45°C and white about 45°C. Past those, milk solids and sugars scorch and the chocolate becomes grainy and dull-tasting — a change that cannot be reversed.
White chocolate is the least forgiving and the most often ruined. Half power in a microwave, or a bain-marie taken off the heat entirely, is the safe approach.
What not to do
Do not melt chocolate over direct heat in a pan — it scorches before the top has melted. Do not add cold liquid to warm chocolate. Do not melt chocolate you intend to temper past the point where all crystals are gone if you plan to seed, though a full melt is fine if you will seed afterwards.
And do not leave it unattended in a microwave. Thirty seconds is genuinely the difference between melted and ruined with white chocolate.
