Chocolate has overheated

Gritty with a burnt smell. Unrecoverable, and it happens at far lower temperatures than most people expect.

Scorching is heat damage to the solids, and it is not reversible. Milk and white chocolate scorch above about 45°C, well below dark chocolate's tolerance of roughly 50°C, because milk solids burn before cocoa solids do.

The result is a grainy texture with a distinct burnt smell and a bitter, dusty flavour. Unlike seizing there is no repurposing route: the off flavour carries into anything the chocolate is used in.

Most scorching comes from heating until everything is molten rather than stopping while a few pieces remain and letting residual heat finish the job.

4050°C — Dark tolerates up to about 50°C; milk and white should not exceed about 45°C. The gap is why generic melting instructions fail on milk chocolate.

Method

  1. 1. Check the smell. A burnt or acrid note confirms scorching rather than seizing.

  2. 2. Discard it. Scorched chocolate carries its off flavour into anything it is added to.

    Where people go wrong: Trying to rescue it with added liquid, which produces a burnt-tasting sauce rather than a usable one.

  3. 3. Start again with a gentler method: stop heating while some pieces are still visible and stir to finish.
