What it is

Dark chocolate is the simplest composition in the category: cocoa mass, usually extra cocoa butter, sugar, and often a little lecithin and vanilla. What it does not contain is milk solids, and that single absence is what separates it from milk chocolate legally and sensorially — milk proteins blunt bitterness and astringency, so removing them leaves the bean audible.

The practical consequence is that dark chocolate is where origin and processing show. A milk bar at 35% can be made from indifferent bulk beans and taste perfectly pleasant; the milk and sugar are doing most of the work. A 75% bar has nowhere to hide, which is why almost all single-origin and bean-to-bar production is dark.

What the percentage means here

The percentage is the combined mass of everything that came from the cacao bean — cocoa solids plus cocoa butter — as a share of the finished bar. The remainder is almost entirely sugar. Crucially, it does NOT say how that total splits between solids and butter, and two 70% bars can differ by ten percentage points of cocoa butter. That is why one 70% bar tastes rich and one tastes harsh, and why a higher number is not a better bar.

How it tastes

Ranges further than any other type. A Madagascan 70% can read as red fruit and citrus; a Ghanaian 70% as straightforwardly cocoa-ish and mildly bitter; a well-made 100% as earthy and surprisingly sweet-edged despite containing no sugar at all.

Working with it

Melts and tempers predictably, and is the default for moulding, enrobing and ganache. Above about 80% the low sugar and high solids content makes it grainier in a ganache and more prone to splitting, so higher-percentage bars generally need more liquid rather than less.

Commonly misunderstood

That a higher percentage means better chocolate, or more antioxidants per unit of enjoyment. It means less sugar and more cacao, which is a statement about proportion, not quality. Poorly fermented beans at 85% are simply more of a bad thing.

Why two bars at the same percentage taste different

Three variables move independently of the number on the front: which beans, how they were fermented, and how the maker split the percentage between cocoa solids and added cocoa butter. The third is invisible on the label and is often the largest single influence on mouthfeel. A maker chasing a silky melt adds cocoa butter, which raises the percentage while making the bar taste milder — the opposite of what the number implies.

The 100% case

Chocolate with no added sugar is not a more intense version of a 70% bar; it is a different eating experience, and it is the clearest test of the beans. Nothing masks under-fermentation, over-roasting or poor conching. Readers who find it inedible are usually meeting a fault rather than a preference.
