Chocolate and pecan

A walnut relative with a fraction of the tannin and considerably more sugar, which is why it works where walnut struggles and why it belongs with caramel.

Pecan and walnut are closely related and behave quite differently in a pairing. Pecan has a higher fat content, noticeably more natural sugar, and much less of the tannic astringency that makes walnut awkward against dark chocolate.

That sweetness is why the pecan-caramel-chocolate combination is so stable — the three sit on a continuous scale of sweet, roasted and rich rather than in tension. It is also why pecan works comfortably with a darker chocolate than walnut does.

The high fat content has a practical consequence: pecans stale faster than most nuts and taste distinctly of paint when they do.
