Fruit character in chocolate arrives by at least four different routes, and readers routinely credit all of it to the bean. Some of it is genetic. Some is a product of a short, bright fermentation. Some is residual acidity that never left during drying — which reads as fruit at low levels and as sourness at higher ones. And at the extreme, an over-fermented bean produces fruit notes that have tipped over into something closer to overripe or fermented fruit, which is a fault.

A reader can usually tell them apart by what accompanies the fruit rather than by the fruit itself, which is what the entries below set out.

    Yeasts in the pulp produce ethanol and esters during the anaerobic phase of fermentation. Shorter fermentations preserve more of this ester character; longer ones develop deeper, rounder flavours instead.

    How to tell: Fermentation-derived fruit usually comes with noticeable acidity, because the same short fermentation that preserved the esters also left more acid in the bean.

    Soil, altitude, rainfall and the microbial population resident in a fermentary all vary by place, and all influence what the fermentation produces.

    How to tell: Terroir attribution is the hardest to isolate and the most often claimed. If a maker cannot say what changed other than the location, treat the claim as unresolved.

Over-fermentation pushes fruit character past ripeness into overripe, winey and eventually putrid notes.

How to tell: A defect reads as fruit that has gone too far — winey, slightly rotten, sometimes with a hammy edge. It does not read as fresh fruit.
