Dominican Republic

The largest source of certified organic cacao, and the origin that best demonstrates that fermentation, not genetics, is what separates a commodity bean from a fine one.

The Dominican Republic is a substantial producer and by a wide margin the leading source of certified organic cacao. It is also the clearest working example of a distinction the rest of this section keeps making: the country has historically exported two grades from the same genetic material, distinguished only by whether the beans were fermented.

Sánchez cacao is largely unfermented or briefly fermented, dried straight after harvest, and sold for uses where flavour is not the point. Hispaniola is properly fermented and commands a much higher price. Same trees, same island, different post-harvest handling, and a difference in the cup that dwarfs most varietal differences the trade talks about.

Growing conditions

Grown across much of the country's interior, predominantly by smallholders, with substantial organic and cooperative certification.

History

Cacao has been grown in Hispaniola since the colonial period, and the Dominican Republic developed a substantial smallholder sector through the twentieth century.

Its modern position was built on organic certification: the country became the world's largest organic cacao producer through cooperative organisation from the 1980s onward, which is an institutional achievement rather than an agronomic one.

The single best argument for fermentation

If one wanted to demonstrate that fermentation rather than variety is the dominant flavour variable in cacao, the Dominican grades are the experiment already run at national scale: hold the genetics and the geography constant, change only the post-harvest handling, and the price and the flavour both move by more than any varietal comparison delivers.

Growing regions

A claim about a country generalises across thousands of farms and dozens of fermentation protocols. A claim about one of these can be right. Where a region has evidence and depth of its own it has a page; where it does not, it is described here rather than given a thin one.

Duarte Province

A province in the Dominican Republic's Cibao valley and one of the country's main cacao areas. It is where the distinction between fermented Hispaniola grade and unfermented Sánchez grade plays out in practice — the same trees, sold two ways at very different prices.
