Berry
Blackcurrant, blackberry, blueberry — the darker, deeper end of the fruit range, and generally a longer fermentation than red fruit.
Where red fruit is sharp and bright, berry notes are darker and rounder: blackcurrant and blackberry rather than raspberry. The distinction matters because it usually reflects a longer fermentation, where the initial ester production has been followed by enough oxidative development to deepen it.
Blackcurrant in particular is a common descriptor for well-fermented Trinitario material and for several Latin American origins.

- Desirable?
- Broadly prized, and easier to pair than sharp red fruit because it is less acidic.
Where it comes from
More than one route produces this note. Each entry says how to tell it apart from the others.
Created during fermentation
InferredLonger fermentation than the red-fruit case, where ester production is followed by oxidative development that deepens the fruit character.
How to tell: Berry notes come with lower acidity than red fruit does. If the fruit is dark and the bar is not sharp, the fermentation ran longer.
