Why chocolate tastes the way it does

Most of it is made rather than grown. Fermentation creates the precursors, roasting converts them, and conching removes what is left over.

If you read nothing else

Fermentation, not origin or variety, is the largest single variable in how chocolate tastes — and it happens on a farm, days after harvest, long before any chocolate maker is involved.

A cacao bean does not taste of chocolate

Fresh from the pod, a cacao seed is bitter, astringent and tastes of almost nothing recognisable. Chocolate flavour is built through a sequence of processes, and a bean that skips the first of them will never taste of chocolate no matter what is done to it afterwards.

Fermentation makes the precursors

Piled with their pulp, the beans are colonised by yeasts, then lactic acid bacteria, then acetic acid bacteria. The heat and acid kill the seed embryo, breaking down cell walls so that the bean's own enzymes can act on its proteins and polyphenols. The products are amino acids and reducing sugars — the raw material the roaster will convert. Nothing downstream can add them.

Drying decides how much acid stays in

Slow drying lets volatile acetic acid evaporate out. Fast artificial drying seals the bean and traps it, which is why some chocolate tastes sharply sour regardless of how well it was fermented. This step is invisible in every discussion of origin flavour and it is frequently the explanation.

Roasting converts, it does not create

The Maillard reaction turns the fermentation's amino acids and sugars into the several hundred aromatic compounds people recognise as chocolate. A light roast preserves fruit and floral character; a dark roast builds uniform cocoa notes and flattens origin distinctiveness. Roasting an unfermented bean produces no chocolate flavour, because there is nothing to convert.

Conching removes

Extended agitation drives off residual acetic acid and other harsh volatiles. Conche too briefly and the bar is sharp; too long and it is smooth and characterless. This step is subtractive, which is why 'more conching' is not a quality gradient.

Where origin actually comes in

Genetics and terroir set the ceiling and contribute real character — the floral quality of Nacional, the acidity that Sambirano material is capable of. But they operate through the processing, not around it. That is why the Dominican Republic exports the same beans at two grades and two very different prices, distinguished only by whether they were fermented.
