Roasting

Where the precursors created by fermentation are converted into chocolate flavour, through the Maillard reaction. The first step that happens in the factory.

Roasting applies heat to the dried beans, driving the Maillard reaction between the amino acids and reducing sugars that fermentation produced. This is the step that generates the several hundred volatile compounds a person recognises as the smell of chocolate.

It is also where a maker's style is most visible. A light roast preserves fruit and floral character and any acidity that survived drying; a dark roast builds deeper, more uniform cocoa and coffee-like notes and flattens origin distinctiveness. Neither is correct — but a dark roast on a delicate Madagascan bean destroys the reason for buying it, and a light roast on a bean with fermentation faults leaves those faults fully audible.

What it does

Drives the Maillard reaction between amino acids and reducing sugars, generating chocolate aroma compounds. Also drives off residual moisture and some remaining acetic acid, and loosens the shell from the nib.

Why it matters

It converts potential into flavour. A well-fermented bean under-roasted tastes raw and sour; the same bean over-roasted tastes burnt and generic. The roast is where a maker decides how much of the origin to keep.

Why the range is wide
Time and temperature trade against each other and both depend on bean size, moisture and the maker's intent. The wide range reflects genuinely different approaches, not uncertainty.

What it does to the flavour

Generates the Maillard products responsible for the core chocolate aroma; reduces acidity and astringency; at higher intensities produces roasted, coffee-like and eventually burnt character at the cost of origin distinctiveness.

Variants

  • Whole-bean roasting. Roasting before winnowing. Loosens the shell and is the traditional order.
  • Nib roasting. Winnowing first and roasting the nibs. Gives more even heat transfer and finer control, at the cost of a harder winnow.
  • Unroasted or 'raw'. Beans processed with minimal heat. The resulting product tastes markedly different from chocolate and the 'raw' label is not a regulated claim — see the glossary.

When it goes wrong

Over-roasting, which produces a flat, burnt, generic cocoa flavour and is frequently used deliberately to hide fermentation problems — a dark roast is the cheapest way to make a mediocre bean taste consistent.

Commonly misunderstood

That roasting creates chocolate flavour from nothing, in the way roasting develops coffee. It converts precursors that fermentation made. Roasting an unfermented bean produces no chocolate flavour, because there is nothing there to convert.

  • HazelnutThis stage is where the note is created, amplified or destroyed. The most commercially important nut note in chocolate, and usually an actual hazelnut rather than a roast product.
  • AlmondThis stage is where the note is created, amplified or destroyed. Marzipan and toasted almond, and one of the more reliable varietal markers for Criollo-descended material.
  • WalnutThis stage is where the note is created, amplified or destroyed. A drier, slightly tannic nut note that shades towards bitterness — and one that can indicate a roast pushed slightly too far.
  • PeanutThis stage is where the note is created, amplified or destroyed. Almost always an added ingredient. Where it appears without one, it is generally a marker of a heavy roast on bulk beans.
  • MolassesThis stage is where the note is created, amplified or destroyed. Dark, slightly bitter sweetness — the deepest register of the caramel family, and a marker of long fermentation or heavy roast.
  • MaltThis stage is where the note is created, amplified or destroyed. Biscuity, cereal-like sweetness. In milk chocolate it is usually the milk-crumb process rather than the beans.
  • CoffeeThis stage is where the note is created, amplified or destroyed. The closest chocolate comes to another food's flavour, and for a real reason — both are fermented seeds that are then roasted.
  • Toasted grainThis stage is where the note is created, amplified or destroyed. Toast, bread crust and cereal — the early, gentler stage of roast development, before coffee and burnt notes arrive.
  • BurntThis stage is where the note is created, amplified or destroyed. Acrid, ashy bitterness that does not clear. A roast fault, and one frequently used deliberately to mask worse ones.
  • CocoaThis stage is where the note is created, amplified or destroyed. The baseline note everything else sits on. Circular as a descriptor, and worth defining because it is what most people mean by chocolate.
