Bitter

A structural component rather than a note, and the one most often confused with astringency — which is a different sensation entirely.

Bitterness in chocolate comes chiefly from theobromine, caffeine and unreduced polyphenols. It is a taste, detected on the tongue, and it is a normal and necessary part of dark chocolate.

Astringency is not bitterness. It is a tactile sensation — a drying, puckering feeling — caused by polyphenols binding salivary proteins. Chocolate can be bitter without being astringent and vice versa, and the confusion matters because they have different causes: bitterness is largely inherent to the bean and its percentage, while high astringency generally indicates under-fermentation.

When it is a fault

Under-fermentation leaves polyphenols unreduced, producing harsh bitterness together with strong astringency.

How to tell: Under-fermentation bitterness comes with a drying, chalky feeling and a flat, purple-tasting quality. This is the most common quality fault in chocolate.

Pairing

Bitterness plus tannin is the classic pairing failure. Bitter chocolate against a tannic red wine amplifies both, which is why the pairing so often disappoints.
