Dark couverture
The default professional coating chocolate: dark composition, high cocoa butter, tempered at 31–32°C.
What it is
Dark couverture is the working chocolate of most professional kitchens. Its cocoa butter content — typically well above an eating bar's — gives the thin flow, hard snap and clean mould release that coating and moulding depend on.
It tempers warmest of the three couvertures, at 31 to 32°C, because there is no milk fat to interfere with crystallisation. That makes it the most forgiving to learn on.

What the percentage means here
Total cacao-derived mass. The number that predicts how it will flow — the cocoa butter fraction — is in the technical specification rather than on the front.
Legal minimums
These differ by jurisdiction, and the difference is real rather than technical: the same words on a wrapper describe different products either side of the Atlantic.

Melt to 45–50°C, cool to 31–32°C with seed. The most forgiving couverture to temper.

- Sugar-free couvertureSubstitutes in the same applications, but follow the manufacturer's stated tempering curve — polyols crystallise differently and the standard temperatures may not hold.
Techniques that work with this
- Dipping in chocolateCoating a centre by hand with a fork. The simplest enrobing there is, and everything depends on the centre being dry and at room temperature.
- Moulding chocolateCasting tempered chocolate into a mould and letting it contract out. Mould release is the honest test of whether the tempering worked.
- Chocolate will not setThree causes, and two of them are materials problems rather than technique ones.
- Melted chocolate is too thinAlmost always temperature. Chocolate above working range is fluid because it is out of temper, not because it needs thickening.
- Coating with chocolateGetting an even, thin, glossy layer over something. Almost entirely a materials question rather than a technique one.
- Making filled chocolatesShell, fill, cap. Three tempered-chocolate operations in sequence, and the filling has to be at the right temperature for all of them.
- Melting for temperingThe first stage of tempering rather than a technique of its own, and it has a requirement ordinary melting does not: every crystal must go.
- Tempering by seedingThe reliable home method: melt most of it, stir in the rest, and let the solid chocolate's existing crystals template the melt.
- Tempering by tablingThe classical method: work two-thirds of the melt on a cool stone until it thickens, then recombine. Faster at volume, messier at home.
- Tempering dark chocolateThe reference curve — 45–50°C, down to 27–28°C, back up to 31–32°C — and the most forgiving of the three.
- Testing the temperThree minutes and a strip of paper, before you commit a batch. The single most useful habit in chocolate work.
- Holding temper while workingTempered chocolate cools and thickens continuously. Managing that is the difference between the first piece and the twentieth matching.
- Enrobing by handCoating a firm centre with a dipping fork. Slower than a machine, identical in result, and the fork technique is most of it.
- Using transfer sheetsPrinted cocoa butter on acetate, transferred onto chocolate as it sets. The cheapest route to a professional finish there is.
- Machine temperingA machine does not temper better than a hand does. It holds the result indefinitely, which is a logistics advantage rather than a quality one.
- Piping chocolateFine decoration from a paper cornet. Pipe thicker than looks right, because thin filigree snaps when peeled.
- Tempering in a microwaveSeeding done entirely in the microwave. Genuinely works, needs more stirring than seems reasonable, and fails the moment you stop checking.
- Tempering without seed chocolateTwo routes when there is no tempered chocolate to seed with: table it on a cold surface, or use cocoa butter powder as the seed instead.
