Tempering in a microwave

Seeding done entirely in the microwave. Genuinely works, needs more stirring than seems reasonable, and fails the moment you stop checking.

Microwave tempering is seeding without a separate melting step: chop the chocolate, heat in very short bursts with a thorough stir between each, and stop while roughly a quarter of it is still solid. The residual heat melts the remainder while the unmelted pieces seed Form V crystals into it.

It works because the two operations — melting most of it and holding back some as seed — happen in one vessel. It fails in one specific way: a microwave heats unevenly, so a bowl can be past the temperature ceiling in places while looking untouched, and by the time that shows the temper is gone.

Stirring is what makes it viable. Not stirring is what makes it a well-known way to ruin chocolate.

What it is for
To bring chocolate into temper without a bain-marie or a separate melting stage.
Working temperature
3132°C — Working temperature by type, as with any tempering: 31–32°C dark, 30–31°C milk, 29–30°C white. The method changes; the targets do not.
Does not work with
White chocolate is a poor candidate. It scorches at temperatures dark chocolate tolerates and a microwave's uneven heating makes that far more likely.

Method

  1. 1. Chop finely and evenly. Uneven pieces melt at different rates and defeat the method.

    Where people go wrong: Using callets or chunks of mixed size, which leaves cold lumps and hot spots.

  2. 2. Heat at medium power for 15–20 seconds, stir thoroughly for a full 20 seconds, and repeat with shorter bursts as it softens.

    Where people go wrong: Stirring briefly. The stir is doing the temperature-evening work, not just the mixing, and a token stir is not enough.

  3. 3. Stop while about a quarter is still visibly solid, then stir until it disappears — that unmelted quarter is the seed.

    Where people go wrong: Heating until it looks fully melted, which destroys the crystals you were relying on.

  4. 4. Check the temperature and test on paper before committing a batch.

When it goes wrong
