Milk couverture

Milk composition at couverture fat levels. Tempers a degree or two cooler than dark, and scorches sooner.

What it is

Milk couverture combines milk chocolate's composition with the high cocoa butter content that makes coating work. The milk fat interferes with cocoa butter crystallisation, which is why it tempers cooler than dark — around 30 to 31°C.

It is also less tolerant of heat during melting: milk solids scorch above about 45°C, well below dark chocolate's limit, and scorched milk couverture is unrecoverable.

Total cacao-derived mass. As with any milk chocolate the remainder includes milk solids as well as sugar.

These differ by jurisdiction, and the difference is real rather than technical: the same words on a wrapper describe different products either side of the Atlantic.

Working with it

Melt to 40–45°C only. Temper to 30–31°C. Scorches well before dark chocolate does.

Techniques that work with this

  • Moulding chocolateCasting tempered chocolate into a mould and letting it contract out. Mould release is the honest test of whether the tempering worked.

  • Making hollow figures and Easter eggsTwo halves joined, or one shell spun. Both need thicker walls than seem necessary, because a thin hollow shell cannot be unmoulded intact.
  • Running a chocolate fountainA pump that cannot handle ordinary chocolate. Thinning it is not optional, and the usual thinner is the wrong one.
