Running a chocolate fountain
A pump that cannot handle ordinary chocolate. Thinning it is not optional, and the usual thinner is the wrong one.
A fountain circulates melted chocolate through an auger and over tiered pans, which requires the chocolate to be substantially thinner than any eating application needs. Ordinary bar chocolate stalls the pump.
The correct thinner is cocoa butter, at up to about 10% by weight, which reduces viscosity without changing the flavour or leaving an oily film. Vegetable oil is what most instructions suggest and it works mechanically while giving a greasy mouthfeel and a surface that never sets properly on the dipped item.
Fountain chocolate is not tempered and is not meant to be. It is held warm for hours, which would destroy temper anyway, so the coating stays soft — that is the format working as intended rather than a failure.

Method
1. Melt the chocolate fully and stir in cocoa butter until it flows freely — up to about 10% by weight.
Where people go wrong: Using vegetable oil. It thins effectively and leaves a greasy film that never sets.
2. Warm the fountain before adding the chocolate, so it does not thicken on contact.
3. Hold at 40–45°C throughout, and keep everything dipped into it dry.
Where people go wrong: Wet fruit. Water seizes the chocolate and a seized fountain has to be emptied and cleaned.
When it goes wrong
