Couverture
A manufacturing grade, not a composition. Chocolate with a high cocoa butter content, made to be melted, tempered and used as a coating.
What it is
Couverture is defined by fat content rather than by what kind of chocolate it is: there is dark couverture, milk couverture and white couverture. The extra cocoa butter — typically well above what an eating bar carries — lowers the viscosity of the melted chocolate so it flows thinly and evenly, sets with a hard snap and a high gloss, and releases cleanly from a mould.
This is the single most useful distinction in the domain for anyone who cooks. Buying an eating bar to coat something with is the most common reason home tempering fails, and the failure looks like a technique problem when it is a materials problem.

What the percentage means here
A couverture's headline percentage means what it means for its underlying type. The number that actually matters for couverture — the cocoa butter fraction — is usually printed separately in the technical specification and almost never on consumer packaging.

These differ by jurisdiction, and the difference is real rather than technical: the same words on a wrapper describe different products either side of the Atlantic.

Working with it
The reason it exists. High cocoa butter means low viscosity when melted, thin even coating, clean mould release, hard snap and high gloss when correctly tempered. Sold as callets, pistoles or blocks rather than as bars.
Commonly misunderstood
That couverture means 'high quality' or 'professional'. It means high cocoa butter. Excellent eating chocolate is frequently not couverture, and couverture is not necessarily better to eat — the extra butter mutes flavour intensity in exchange for the working properties.
Why an eating bar fails as a coating
Melted eating chocolate is thicker, so it pools rather than films; it sets softer, so it fingerprints; and it releases less cleanly from moulds. None of these is fixed by better technique. Readers whose home tempering 'never works' are frequently tempering correctly with the wrong material.
