Velvet spray finish

A velvet finish is a mixture of roughly equal parts chocolate and cocoa butter, warmed to around 40°C and sprayed through a fine gun onto a frozen dessert. The droplets solidify on contact with the cold surface, and the microscopic texture that leaves is what reads as suede.
