Bark is a poured sheet of chocolate with toppings scattered over it while still fluid, broken into irregular pieces once set. It requires no moulds, no precision and no shaping.

The two things worth getting right are thinness and topping timing. Too thick and it is unpleasant to eat; toppings added after the surface has begun to set do not adhere and fall off in the tin. Everything else about it is genuinely forgiving, which is why it is the right first project.

Method

  1. 1. Temper the chocolate and pour it onto lined baking paper.

  2. 2. Spread to about 3–5mm with a palette knife.

    Where people go wrong: Spreading too thick, which gives pieces that are hard to bite.

  3. 3. Scatter toppings immediately while the surface is still fluid, and press lightly.

    Where people go wrong: Waiting. Toppings added to a setting surface do not bond and come off in the tin.

  4. 4. Set at cool room temperature, then break into irregular pieces.
