What it is
Callets, pistoles and discs are the same couverture a professional buys in blocks, moulded into small uniform pieces. The advantage is entirely practical: uniform mass melts uniformly, which removes the most common cause of scorching, and pre-portioned pieces make weighing and seeding far easier.
They are worth distinguishing from chips, which they physically resemble and functionally oppose. Callets are high in cocoa butter and are made to melt; chips are low in it and are made not to. Buying the wrong one is a common and expensive mistake, and the packaging often looks near-identical.

What the percentage means here
