Making ganache

An emulsion of chocolate and cream. The ratio is chosen for the intended use, and it changes with the type of chocolate rather than with taste.

Ganache is chocolate and a liquid — usually cream — brought together as an emulsion: fat droplets suspended in water rather than melted chocolate diluted. That distinction is why technique matters. A ganache that has 'split' has broken the emulsion, and it looks greasy and grainy rather than merely thin.

The ratio is set by two things: how firm you need the result, and how much cocoa butter the chocolate already carries. Dark chocolate needs roughly twice its weight of chocolate to cream for a firm truffle; milk chocolate needs more chocolate for the same firmness because its cocoa solids are lower and its sugar higher; white chocolate needs more again.

Working temperature
3240°C — Emulsions form best when the two components are within a few degrees of each other. Cold cream into hot chocolate, or hot cream into cold chocolate, is the most common cause of splitting.

Method

  1. 1. Chop the chocolate finely and place it in a bowl.

    Where people go wrong: Chunks too large to melt in the residual heat of the cream, which leads to over-heating to compensate.

  2. 2. Heat the cream to just below boiling and pour it over the chocolate.

    Where people go wrong: Boiling the cream. It is not needed and increases the chance of splitting.

  3. 3. Leave undisturbed for a minute, then stir from the centre outwards in small circles until glossy and homogeneous.

    Where people go wrong: Whisking vigorously from the start, which incorporates air and destabilises the emulsion before it has formed.

When it goes wrong

Greasy, grainy, visibly separatedThe emulsion has split — the fat has come out of suspension.Add a tablespoon of warm milk or cream and stir vigorously from the centre. If that fails, blend with a stick blender kept below the surface to avoid adding air.
Will not set firmToo much liquid for the chocolate used, or a chocolate with lower cocoa butter than assumed.Melt in more chocolate of the same type. Refrigeration will firm it temporarily but it will soften again at room temperature.
Grainy from the start, never becomes glossyThe chocolate was overheated before the cream was added, or water got in.Blending may rescue an overheated ganache. A water-seized one is not recoverable as ganache.
