Why chocolate mousse goes wrong
Three failures — lumps, collapse and grease — with three different causes, and only one of them is about folding technique.
If you read nothing else
Lumps are a temperature mismatch, collapse is over-whipping or over-folding, and grease is over-chilling. Only the second is about technique in the way people assume.
Lumps
Hot melted chocolate meeting cold cream or cold egg white seizes on contact into hard specks that will not fold out. This is by far the most common mousse failure and it is entirely a temperature mismatch.
The chocolate should be around 40–45°C when it meets the other components — warm but not hot — and the cream and eggs should be at room temperature rather than straight from the fridge. Fold a spoonful of the aerated mixture into the chocolate first to bring the temperatures closer before combining fully.
Collapse
A flat, dense mousse has lost its air. Over-folding is one cause; another is over-whipping the cream, which past soft peaks becomes grainy and holds air less well.
Whip cream only to soft peaks. Fold in thirds, cutting through and lifting rather than stirring, and stop the moment the streaks disappear. A slightly under-folded mousse with a faint marble is better than a smooth deflated one.
Grease and separation
A mousse that weeps fat or feels greasy has usually been over-chilled after setting, or was made with a chocolate whose fat content was too high for the amount of aeration.
White chocolate mousse is the most prone to this and needs a higher chocolate proportion and gentler handling. It is the hardest of the three to get right.
Setting and timing
A mousse set with cream and chocolate alone needs three to four hours in the fridge. Egg-white mousses set faster and hold less well; gelatine-stabilised versions hold longest and are the professional choice for anything that has to travel.
Make it the day before. Mousse improves overnight and the texture is more even than at four hours.
