Chocolate buttons vs callets
Both are small discs. Callets are couverture sold for professional use; buttons are usually a confectionery product for eating.
Why these get confused
The shapes are nearly identical, so a bag of children's buttons and a bag of professional callets look interchangeable. Their cocoa butter contents are not remotely comparable.
Side by side
| Chocolate buttons | Callets | Why it matters | |
|---|---|---|---|
| What it is | Usually a sweet milk chocolate confection sold to eat, though some baking buttons exist. | Couverture in a convenient format, sold by weight for professional use. | Callets are defined by what is in them; buttons are defined by their shape. Read the cocoa butter content, not the name. |
| Cocoa butter | Whatever the confection contains — often low. | 31% minimum, and generally well above. | Only callets flow thinly enough to coat and enrobe properly. Buttons will not. |
| Melting evenness | Uniform size, which helps. | Uniform size, deliberately, for even melting and seeding. | The format's real advantage is that identical pieces melt at the same rate — useful for tempering by seeding. |
Choose Chocolate buttons when
For eating, and for baking where a distinct piece is wanted.
Choose Callets when
For any tempering, coating, moulding or enrobing work.
