Moulding chocolate
Casting tempered chocolate into a mould and letting it contract out. Mould release is the honest test of whether the tempering worked.
Moulding fills a rigid mould — polycarbonate is the standard — with tempered chocolate and lets it set. Correctly tempered chocolate contracts measurably as it crystallises, so a well-tempered piece releases essentially by itself.
That makes moulding the most useful diagnostic a home chocolatier has. If a bar has to be forced out, prised or frozen loose, the tempering failed. Nothing about the mould can fix it.
The mould itself must be scrupulously clean, dry and at room temperature. Any residue transfers to the finished surface, and the gloss on a moulded piece is the mould's own surface reproduced.

- 15–18°C — Setting temperature, not working temperature. Too cold causes bloom and cracking; too warm and the piece never fully contracts.

- Silicone moulds work poorly for chocolate: they flex, so the piece cannot contract cleanly away from a rigid wall, and the finish is matt rather than glossy.
Method
1. Polish the mould with cotton wool and ensure it is completely dry and at room temperature.
Where people go wrong: A cold mould, which shocks the chocolate into the wrong crystal form at the surface.
2. Fill with tempered chocolate, then vibrate or tap firmly to release trapped air.
Where people go wrong: Insufficient vibration, giving visible bubbles on the finished face.
3. Scrape the surface level and cool at around 15–18°C until the chocolate has visibly pulled away from the mould walls.
Where people go wrong: Refrigerating to speed it up, which causes condensation and sugar bloom.
4. Invert and tap once. A correctly tempered piece falls out.
Where people go wrong: Forcing it. If it will not release, the temper failed — remelt and start again rather than damaging the mould.
When it goes wrong

| Dull or patchy finish | A dirty or scratched mould, or chocolate out of temper. | Polish the mould with cotton wool. If a clean mould still gives a dull result, the temper is the problem. |
| Air bubbles on the face | Insufficient vibration after filling. | Tap the filled mould firmly on the bench for longer, or use a vibrating table. |
