What it is

Panning tumbles centres — nuts, raisins, coffee beans — in a rotating drum while tempered chocolate is added a little at a time, each layer setting before the next. The rotation is what makes the coating even and the finished piece round.

It is genuinely specialist equipment and a slow process: a well-panned dragée may have taken hours and dozens of layers. Many are then polished with a shellac or gum arabic glaze, which is what gives commercial chocolate-covered nuts their gloss and why they do not melt in the hand.
