Chocolate at weddings

Volume, heat and time are the three constraints, and they rule out most of what people first think of.

If you read nothing else

Heat and time decide it. Anything with fresh cream in it and anything relying on a temper holding through a warm afternoon should be planned around, not hoped over.

The three constraints

Volume: you are buying for a hundred people rather than for one, which changes what is affordable and what is practical to plate.

Heat: a marquee in July, a room full of people, and hours on a table. Chocolate softens well below body temperature and a display that looked right at ten in the morning can be unpresentable by four.

Time: favours are made in advance and sit. Fresh ganache centres have a life measured in days, so anything perishable has to be made close to the date or refrigerated, and refrigerated chocolate brought out to a warm room will condense and then bloom.

What survives and what does not

Survives: moulded items with a firm shell, dragées and panned nuts, plain tempered bars and shards, dipped dried fruit, and anything with a low-moisture centre.

Struggles: fresh cream ganache in the open, hand-rolled truffles in cocoa powder, tempered decorations on a warm cake, and chocolate fountains, which look impressive and are the single most common source of problems — they need a coating formulated to flow and they are unforgiving of heat and of anything wet going into the bowl.

If a chocolate element has to survive a warm day, a compound coating is a legitimate choice for the display parts. It is technically inferior chocolate that stays where you put it.

Planning it

Decide early whether the chocolate is eaten or looked at. Display work and eating quality pull in opposite directions and pretending otherwise is why couples end up with beautiful favours nobody finishes.

If you are commissioning, ask the maker what the piece is formulated to survive and for how long. A professional will answer with a temperature and a number of hours. If they do not, that is the answer.
