Chocolate work in hot climates

Above about 26°C ambient, tempering is not viable and no technique changes that. What changes is what you make.

Tempered chocolate needs an ambient temperature below roughly 20°C to set properly, and below 18°C for milk and white. That is a physical constraint rather than a skill one, and in a hot climate it rules out a great deal of chocolate work for much of the year.

The workable responses are to shift the time — early morning, before the kitchen warms — to reduce the batch size so nothing sits long, and to cool the work surface with a chilled stone slab.

Beyond about 26°C the honest answer is to change the project. Ganache, chilled desserts, bakes and drinks all work in heat. Compound coating sets without tempering and tolerates warmth far better, at the cost of mouthfeel.

1826°C — Ambient, not chocolate. Below 20°C is workable, 20–26°C is marginal, above 26°C tempered work will not set.

  1. 1. Measure the room before starting. Below 20°C tempering works; above 26°C it does not.

  2. 2. Where it is marginal, work early, use a chilled stone slab, and keep batches small.

  3. 3. Where it is not viable, switch to ganache, chilled desserts or compound coating rather than fighting the room.

    Where people go wrong: Using the fridge to force a set, which draws condensation and produces sugar bloom.
