Working with chocolate in a warm kitchen

Above about 24°C, chocolate work gets progressively harder and then impossible. Some of it is manageable and some of it is not.

If you read nothing else

Chocolate needs a room below about 20°C to set well. Work early, use a cold slab, set in the coolest room you have, and avoid the fridge — condensation causes sugar bloom.

Why heat is the enemy

Tempered chocolate sets by crystallising, and crystallisation needs the ambient temperature to be meaningfully below the chocolate's melting point. Dark chocolate wants a room at 18–20°C to set properly; milk and white want cooler still.

At 26°C, dark chocolate sets slowly and softly. At 30°C it does not set at all. This is a physical limit rather than a technique problem.

What actually helps

Work early in the morning, before the kitchen warms. Cool the work surface — a marble slab from the fridge holds cold for a useful period. Work in smaller batches so each is finished before the chocolate drifts.

A cool room elsewhere in the house for setting is worth more than anything you do at the bench. A cellar, a north-facing room, or a cool garage all work.

The fridge problem

The obvious answer is the wrong one. Chocolate moved from a warm room into a fridge draws condensation, and that moisture dissolves surface sugar which recrystallises as sugar bloom — a rough, gritty white surface.

A short spell in the fridge, ten to fifteen minutes, then out, is tolerable. Setting chocolate in the fridge as standard practice produces bloomed, dull results, and bringing it back out into a warm room compounds the condensation.

When to give up

Above about 26–28°C ambient, tempering and moulding are not viable and no amount of technique changes that. Switch to something the heat does not fight: a ganache, a chilled dessert, a bake.

Compound coating is the other option — it sets without tempering and tolerates warmth far better. It is not chocolate and it does not taste as good, and for a hot-weather project with children it is the sensible choice.
