Handling and storing chocolate

Chocolate keeps for months given the right conditions, and degrades quickly given the wrong ones. The conditions are a steady 15 to 18°C, humidity below about 55%, wrapped or sealed, out of direct light and away from anything aromatic.
Steadiness is the part most often missed. Cycling between warm and cool accelerates the crystal conversion that produces fat bloom far more than a constant slightly-too-warm cupboard does. And cocoa butter absorbs ambient odours efficiently, so chocolate stored beside coffee or spices takes on their smell irreversibly — which is why it is wrapped in foil rather than paper.

Method
1. Wrap or seal the chocolate, and keep it away from aromatic foods.
Where people go wrong: Storing an opened bar beside coffee or spices, which taints it permanently.
2. Store at a steady 15–18°C in low humidity, out of direct light.
Where people go wrong: The fridge. Condensation on the cold surface dissolves sugar and leaves sugar bloom when it dries.
3. If refrigeration is unavoidable in a hot climate, wrap airtight and let it reach room temperature fully before unwrapping.
When it goes wrong
