How to prevent chocolate bloom
Temper properly and store at a stable temperature. Cycling matters more than warmth.

Temper properly, store sealed at a stable 15–18°C, and keep chocolate out of the fridge. Temperature cycling causes more bloom than steady warmth does.
The two kinds, briefly
Fat bloom is unstable cocoa butter crystals converting over time and pushing fat to the surface — greasy and blotchy. Sugar bloom is moisture dissolving surface sugar, which recrystallises — sandy and even.
They have different causes and different preventions, and neither is spoilage.
Preventing fat bloom
Two levers. Temper properly, verified with a test strip: a well-tempered piece blooms far more slowly than a poorly tempered one, and an untempered piece blooms within weeks.
Then store at a stable temperature. A cupboard swinging between 16°C and 26°C each day blooms chocolate faster than a steady 22°C does — cycling drives the crystal transition more than absolute warmth.
Preventing sugar bloom
One lever: keep moisture away. That means a sealed wrapper, a dry cupboard, and not the fridge, which is both humid and full of odours cocoa butter will absorb.
Where refrigeration is unavoidable in a hot climate, wrap airtight and let the chocolate return to room temperature still sealed, so condensation forms on the wrapper rather than on the chocolate.
