Freezing chocolate for long storage
Possible, and the risk is entirely in the thawing. Wrap airtight, thaw sealed, and never rush it.
If you read nothing else
Freeze wrapped airtight, and thaw in two stages — freezer to fridge to room — leaving the wrapping on until it reaches room temperature. The thawing causes the damage, not the freezing.
It keeps, and it is rarely necessary
Dark chocolate stored properly at 15–18°C keeps for a year or more without freezing, so the freezer is usually solving a problem that does not exist. Where it genuinely helps is milk and white chocolate, whose milk fat oxidises within six to twelve months, and bulk couverture bought in quantity.
Frozen chocolate does not deteriorate meaningfully over a year or two. What damages it is the transition in and out.
The thawing is the whole risk
Chocolate moved from a freezer into a warm room draws condensation, and that moisture dissolves surface sugar which recrystallises as sugar bloom — a rough, gritty white crust.
The prevention is a two-stage thaw with the wrapping left on throughout. Move it from the freezer to a fridge for several hours, then from the fridge to a room for several more, and only unwrap once it has reached room temperature. Condensation then forms on the wrapper rather than on the chocolate.
Wrapping and expectations
Wrap airtight and then wrap again. Cocoa butter absorbs odours readily and a freezer is full of them, so a single layer of foil is not enough for long storage.
Expect some loss of snap and gloss regardless. Frozen and thawed chocolate is entirely usable for melting, baking and ganache, and is a poor choice for anything where the surface will be seen — which is the same advice as for bloomed chocolate, for the same reason.
