Storing finished chocolates

Filled chocolates keep for days to weeks depending entirely on the filling, not on the shell.

A finished bonbon's shelf life is set by what is inside it. A fresh cream ganache centre keeps one to three weeks refrigerated; a caramel, praliné or nut-paste centre keeps for months at room temperature, because it contains almost no available water.

That is why commercial assortments are built on caramels and pralinés and a chocolatier's counter box must be eaten soon. It is a formulation decision rather than a quality one, and anyone giving away homemade filled chocolates should say which they are.

The shell itself keeps essentially indefinitely and contributes nothing to the limit.

What it is for
To store finished chocolates for as long as the filling allows.
Working temperature
418°C — Cream-filled pieces at fridge temperature; everything else at 15–18°C. The two should not share a storage plan.

Method

  1. 1. Identify the limiting filling. Cream-based centres set the shelf life for the whole box.

  2. 2. Store sealed at 15–18°C for sugar- and fat-based fillings; refrigerate cream ganache centres and eat within two weeks.

  3. 3. Bring refrigerated pieces back to room temperature still sealed before opening.

    Where people go wrong: Opening cold, which condenses moisture onto the surface and produces sugar bloom.
