Holding temper while working
Tempered chocolate cools and thickens continuously. Managing that is the difference between the first piece and the twentieth matching.
Once tempered, chocolate begins crystallising further and cooling. Left alone it thickens progressively, which is why the twentieth dipped piece comes out heavier than the first and why a batch of moulded shells varies in thickness across the tray.
A machine solves this by holding temperature. By hand, the answer is warmth applied sparingly — a few seconds over the bain-marie, or a heat gun at a distance — and stirring, which redistributes both heat and crystals. The mistake is warming decisively: two degrees too far dissolves the Form V crystals and the batch is out of temper.

Method
1. Check the temperature every few minutes rather than by feel.
2. When it drops below range, warm for a few seconds only and stir thoroughly before checking again.
Where people go wrong: Warming until it feels fluid, which overshoots and loses the temper — the fluidity you are chasing arrives a degree above the ceiling.
3. Work in small batches so no bowl sits long enough to drift far.
