Why melted chocolate is too thin
A less common problem than the opposite, and usually caused by something having been added — which cannot be taken out again.
If you read nothing else
Too warm is recoverable by cooling; added cocoa butter is correctable by adding more chocolate; added oil or butter cannot be undone and the batch will not set hard.
Added fat
The most frequent cause. Oil, butter or extra cocoa butter added enthusiastically thins the chocolate beyond what a coating needs, and there is no way to remove it.
The practical response is to add more chocolate rather than to try to recover the original. If the added fat was cocoa butter, the batch still tempers; if it was oil or butter, it will not set hard whatever you do.
Too warm
Chocolate above its working range is thinner than it should be, and it will not set properly either. If the chocolate is thin *and* refusing to set, temperature is the likely cause and cooling it back into range fixes both.
This is the one thin-chocolate problem that is fully recoverable.
Compound coating
Compound coating is designed to flow thinly and behaves quite differently from real chocolate. A reader who has switched products may find it thinner than expected, and that is the product working as intended rather than a fault.
It also sets without tempering, so the usual diagnostic of thinness plus failure to set does not apply to it.
