Melted chocolate is too thin

Almost always temperature. Chocolate above working range is fluid because it is out of temper, not because it needs thickening.

Chocolate that runs off a centre and leaves a coating too thin to look right is usually simply too warm. Above working temperature the crystal network has not begun to form, so the chocolate is fluid — and it is also out of temper, which means it will set dull and soft.

The fix is to cool it into working range with tempered seed, not to add anything. Thickening agents do not work in chocolate: it is a fat-continuous system, and starch or sugar added to thicken it will simply sit there as grit.

A genuinely thin couverture — one formulated with very high cocoa butter for enrobing — will always coat thinly, and that is what it is for.

Method

  1. 1. Check the temperature. Above about 34°C the chocolate is out of temper and will be fluid.

  2. 2. Cool it into working range while stirring, adding finely chopped tempered chocolate as seed.

  3. 3. If it is at the right temperature and still too thin, the material is a high-fat enrobing couverture and is behaving as designed.
