Tempering by tabling

The classical method: work two-thirds of the melt on a cool stone until it thickens, then recombine. Faster at volume, messier at home.

Tabling pours most of the melted chocolate onto a cool marble or granite slab and works it with a scraper and palette knife until it thickens and cools to around 27–28°C. Returned to the warm remainder, it brings the whole batch into temper.

It is the method demonstrated in every professional kitchen and it is not more effective than seeding — it is faster at volume, because a slab cools chocolate far quicker than stirring does. At home it needs a stone surface and produces a great deal of mess for no advantage.

Working temperature
2732°C — Two temperatures matter: the cooled portion at 27–28°C for dark, and the recombined working temperature at 31–32°C.

Method

  1. 1. Melt all the chocolate to 45–50°C for dark and pour two-thirds onto a cool stone slab.

    Where people go wrong: Using a warm slab. Marble taken from a warm kitchen does not cool chocolate fast enough to matter.

  2. 2. Spread, scrape and fold continuously with a palette knife and scraper until it thickens and reaches 27–28°C.

    Where people go wrong: Stopping when it looks thick. The temperature is the criterion, not the texture.

  3. 3. Scrape it back into the warm third and stir until uniform, landing at 31–32°C for dark.

  4. 4. Test on baking paper before committing a batch.

When it goes wrong
